Ah, the humble tortilla. It may well be made up of only a handful of everyday ingredients, but it’s a key addition to many a restaurant’s culinary offering.
A mainstay of Spanish and South American cuisine, the tortilla originates from Mexico. While today they’re made from finely ground wheat flour, it derived from the corn tortilla, and was traditionally made from cornflour. To prepare a wrap of this kind, an unleavened water-based dough is pressed and cooked, before being served in a host of exciting ways.
Like the unleavened bread popular in Semitic, eastern Mediterranean and southern Asian countries, tortillas tend to be smaller and thinner. They even go by different names, depending on where you are in the world; in India, for instance, the tortilla is known as a ‘roti’.
